Barnie’s Coffee Mini Cheesecakes

Who doesn’t love Valentines Day? With all of the sweet treats, beautiful flowers, heart shaped décor, there is nothing sweeter than a special day to remind yourself who you love. Valentines Day wouldn’t be complete with out some type of delicious dessert however. So when Barnie’s Coffee Kitchen asked me to do a post featuring their scrumptious BREWSTICKS and Valentines Day, I thought what a perfect opportunity. A sweet, coffee infused cheesecake with chocolate and caramel drizzle is just the right treat for the job. So grab that special someone, your favorite red dress and celebrate Valentines Day, in the sweetest way possible… because these cheesecakes are OMG fab!

Barnie’s Coffee Kitchen has this new product out on the market called BREWSTICKS, which is a liquid instant coffee that comes in a portable packet. Not only do BREWSTICKS make delicious coffee on the go, with just simply adding a packet to warm or cold water, you can also use BREWSTICKS as flavoring when you bake.

A chocolate cookie crust is topped with a creamy cheesecake flavored with a French Roast BREWSTICK. Since it is Valentines Day and everything needs to be extra sweet, top the petite cakes with a drizzle of chocolate, caramel sauce and a chocolate espresso bean.

These cheesecakes are simple, and can be put together in a pinch. Valentines Day is meant to be relaxed, and sweet. And these Barnie’s Coffee Mini Cheesecakes do just that!

 

Ingredients:

For the crust:

1 ½ cup ground chocolate cookie wafers

¼ cup granulated sugar

¼ cup of melted butter

For the cakes:

4 pkg.  (8 oz. each) cream cheese, softened

1 cup sugar

1 tsp Barnie’s Coffee Kitchen French Roast BREWSTICK

4 eggs

For topping:

1/3 cup melted semi sweet chocolate

1/3 cup caramel sauce

Espresso beans

 

Directions:

  1. Heat oven to 325°F.
  2. Mix ground chocolate cookie wafers, ¼ cup of sugar, and melted butter together in a small bowl. Press onto bottom of a greased mini cheesecake pan.
  3. Beat cream cheese, 1 cup sugar, and 1 tsp Barnie’s Coffee Kitchen French Roast BREWSTICK until blended. Add eggs, 1 at a time, mixing on low speed until each is blended. Pour over crust.
  4. Bake 30 minute, or until center of cheesecakes are set. Cool before removing from pan.
  5. Drizzle with melted chocolate and caramel sauce. Top with chocolate covered espresso bean.
