Busy week day morning breakfasts call for avocado toast. It’s a go-to staple in my book, and I seriously can’t get enough of it. Switching things up, I decided to put grapefruit segments with a little drizzle of olive oil and a shake of salt and pepper on my toast. Who doesn’t love a pink and green breakfast? It’s perfectly preppy and perfectly delicious.

Avocado toast is fabulous for so many reasons. It’s quick, and with a busy lifestyle like many of us have, it’s a great way to have a gourmet and delicious meal on the go. If you’ve checked out some of my previous posts, I’ve topped toast with everything from hummus to strawberries to eggs drizzled with spicy siracha. I love this combination with avocado and grapefruit because the flavors are so unexpected, but pair so well together. Plus it’s pink and green, my two favorite colors.

Ingredients:

Bread

Avocado

Grapefruit segments

Olive oil

Salt and pepper

 

Directions:

1. Toast bread. Take 1/4 of an avocado and mash it on bread with a fork. Top with grapefruit segments.

2. If desired, drizzle with olive oil and a shake of salt and pepper.
