Bartlett’s Blueberry Salad

The 4th of July is a whirlwind weekend of beach picnics, BBQs and social gatherings. After a weekend filled with patriotic, yet un-healthy food and drinks, I was looking to start this week off on a healthier note. I picked up a variety of different fresh fruits and vegetables at Bartlett’s Farm Sunday, and came up with this mixed greens and blueberry salad which makes a delicious and light summer meal. Bartlett’s Farm is one of my favorite locations on Nantucket, because everything is so fresh and vibrant. Typically I come to Bartlett’s without a grocery list, and just buy whatever looks the best and that’s what happened on Sunday.

Mixed greens, blueberries, almonds, goat cheese, are combined with a honey and lemon dressing to make a satisfying, yet light meal. Don’t get me wrong, I love to cook. I love to roast meats and vegetables in the oven and I don’t mind stirring a pot of risotto for hours on end, but when it comes to summer dishes, quick and easy is the way to go. It’s too hot outside to spend hours inside cooking, so take advantage of the weather and the fresh produce that is available this season. Serve this salad alone, with a crusty loaf of bread or pair with fresh fish or chicken.

Ingredients:

6 oz. mixed salad greens

½ cup sliced almonds, toasted

¼ cup crumbled goat cheese

1 cup fresh blueberries

Juice from ½ a large lemon

2 garlic cloves, minced

2 tablespoons honey

¼ cup extra virgin olive oil

Salt and pepper to taste

 

Directions:

1. Place mixed greens, blueberries, goat cheese and almonds in a large bowl.

2. In a separate small bowl, combine the lemon juice, garlic, honey, olive oil and salt and pepper.

3. Pour desired amount of dressing on salad and toss to combine.
