Pop quiz: Which appetizer will have your guests buzzing for days: (A) jalapeño poppers, (B) pigs in a blanket or (C) bite-sized chicken and waffles? The answer is definitely C. Jalapeño poppers are great and all, but we’ve been there and done that. Pigs in a blanket? Yawn. You need something that’s going to elevate your appetizer game to expert level. Like, an epic upgrade on chicken & waffles. Ladies and gentlemen, these bite-sized nuggets of hot, crisp, sweet and salty will hit your taste buds in all the right places. Not to mention how simple they are to put together this New Years Eve, after all of that holiday entertaining we’ve been doing.
I don’t know about you all, but it has been a whirlwind holiday season. Can I admit I am a bit tired? With New Years Eve only a few days a way, I only have super simple recipes on my radar. Luckily this recipe is simple enough, and all you have to do is grab some frozen popcorn chicken and cook according to the package directions, top onto toasted mini waffles and drizzle with maple syrup. With a skewer in each bite, they turn into an appetizer perfect for grabbing and grazing.
I suggest making these chicken and waffle bites for a party where you need hearty snacks or heavy hors d’oeuvres, like New Years Eve where typically a lot of drinking is involved. These are the perfect balance of protein/fat/carb and you could make a meal of these which is great for hungry guests.
- frozen mini waffles, toasted
- chicken tenders
- real maple syrup
- Cook chicken according to package instructions.
- Toast waffles, until golden brown. Slice the waffles apart.
- Place one piece of cooked chicken onto a waffle. Secure with a toothpick. Drizzle with maple syrup and serve warm.
NOTESCook up as many waffles and chicken fingers as needed. I like to serve 2-3 per person.
