Chocolate Chip Cookie Ice Cream Sandwiches

I scream you scream, we all scream for ice cream! Looking for a DIY Ice Cream Sandwich recipe you can make this weekend? Creamy Cookie Dough ice cream is sandwiched between two freshly baked chocolate chip cookies. These sweet sandwiches are not only cool on a hot summer day, but are also darling and easy to eat whether you’re in the pool or hanging out at a BBQ. The best part about this dessert is that there are no utensils, which equals no clean up.

This dessert is so versatile and can be changed depending onyour liking. Just follow the directions below and use whatever cookie/ice cream combo you want! I say the more the merrier when it comes to flavor combinations. What a difficult job taste testing all of those! So break out your ice cream scooper and bake some cookies – these make a delicious weekend treat!

Ingredients:

2 ¼ cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 cup butter, softened

¾ cup granulated sugar

¾ cup packed brown sugar

1 teaspoon vanilla extract

2 large eggs

2 cups Semi-Sweet Chocolate Morsels

1/2 gallon of your favorite ice cream

 

Directions:

  1. Preheat oven to 375° F.
  1. Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
  1. Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
  2. Take one small scoop of ice cream and place in-between two cookies. Sandwich together. Serve immediately, or wrap in plastic wrap and freeze.
