Who said breakfast has to be boring? A quick and simple egg sandwich using fresh finds from this weekends farmers market. Toasted farm fresh bread, is topped with smashed avocado, a fried egg, bacon and sweet tomato slices. It’s the perfect example of simple and delicious. Did someone say breakfast for dinner? I think yes!

I absolutely love going to the local farmer’s market and I wish I could shop there daily. Is it just me or does food from the farmer’s market taste SO much better? This is one of those egg sandwiches that can be made while your coffee is brewing, it’s that simple. They say breakfast is the most important meal of the day… so make it special. Running short on time? This sandwich can be easily wrapped in tin foil and eaten in the car.  Another reason why it’s one of my faves.

Ingredients: 

Bread, 2 slices

Bacon, 2 slices

Egg

Tomato, sliced

1/2 Avocado

Salt and pepper

 

Directions:

1. In a frying pan, cook bacon until crispy. Set aside.

2. Toast bread. While bread is toasting fry egg.

3. Mash half an avocado on to toasted bread. Top with fried egg, bacon and sliced tomato.
