Lucky Charm Rice Krispie Squares

Growing up, the Original Preppy Hostess took St. Patricks Day very seriously, and I could always count on having green milk for breakfast in the morning, along with many other “magically delicious” treats throughout the day. A Lucky Charm Marshmallow Bar was always a staple in my lunch box, and something I looked forward to almost daily during the month of March. I’ve made several variations of these bars over the years, but so far this is my favorite combination. I used Rice Krispie cereal for more of an airy bite and topped them off with the magical Lucky Charm cereal marshmallows. These are perfect for a last minute St. Patricks Day event or to surprise someone in their lunch box. Either way they’re truly “magically delicious”!

Like I said above, I make these bars every year and typically I change a few things. Most of the time I have used all Lucky Charms cereal, and sometimes I’ve dyed them green but so far this has been the most delicious method. Using all Lucky Charms makes the bars a bit hard and I like them light and airy. Use whatever you have on hand, because you can’t really go wrong with butter, marshmallows and cereal… at least I never have.

Being half Irish, St. Patrick’s Day has always been celebrated. Like any other older sibling, I used to love playing tricks on my brother and my younger cousin who I was, and still am very close with. They were three years younger and very impressionable. I mean VERY. One St. Patrick’s Day, I lead them on a mile long hunt, for leprechauns throughout our neighborhood and formed a trail of Jelly Beans, all over the yard and down the street, to a neighbor’s house. I told them if they followed the trail they would find the leprechauns, and they believed me! Needless to say they were pretty mad at me when they got to the end and there were no leprechauns, pots of gold, or candy! Every year around this time, I remember that story, and laugh to myself how I tricked them!

Ingredients: 

3 tablespoons butter

4 cups Miniature Marshmallows

6 cups Rice Krispies Cereal

1 cup Lucky Charms Cereal Marshmallows

 

Directions:

1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.

2. Add Rice Krispies cereal. Stir until well coated.

3. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Sprinkle with Lucky Charms Cereal Marshmallows. Cool. Cut into squares. Best if served the same day.
