Mexican Vegan Grain Bowl

Dinner tonight? Skip Chipolte and try this easier, healthier and tastier grain bowl you can make at home. A mixture of whole grain rice, black beans, corn, creamy avocado, chopped tomato, bright orange pepper, sprinkled with fresh cilantro and a fresh squeeze of lime make this bowl packed with flavor and nutrition. I love this dish because everything can be prepped beforehand and assembled right before serving. It makes the dinner rush a little less hectic and a lot more enjoyable. Trust me, you’ll definitely win over your families approval.

* Recipe makes four bowls

Ingredients:

4 cups wild rice and quinoa blend

1 cup fresh corn

1 cup black beans

1 cup chopped tomato

1 cup chopped orange pepper

1 avocado

2 limes

1 bunch of cilantro

 

Directions:

1. Cook rice and quinoa blend according to package directions. Top each bowl with a cup of rice and quinoa mixture, 1/4 cup corn, black beans, tomato, and orange pepper. Add 1/4 of the avocado. Sprinkle with lime juice and chopped cilantro.
