Ingredients:
4 cups wild rice and quinoa blend
1 cup fresh corn
1 cup black beans
1 cup chopped tomato
1 cup chopped orange pepper
1 avocado
2 limes
1 bunch of cilantro
Directions:
1. Cook rice and quinoa blend according to package directions. Top each bowl with a cup of rice and quinoa mixture, 1/4 cup corn, black beans, tomato, and orange pepper. Add 1/4 of the avocado. Sprinkle with lime juice and chopped cilantro.
