Spicy Sweet Potato Fries

I love a simple, delicious recipe that requires minimal ingredients, and takes less than thirty minutes to prepare. Lately I’ve been into sweet potatoes, whether its in salads, soups, as chips or even in muffins. So I thought, why not make fries? Sweet potatoes are naturally sweet, so they’re begging to be tossed in all things spicy. A spice mix including salt, pepper, paprika, cayenne, garlic powder and thyme make these fries out of this world fantastic! The perfect side for a burger, as a snack, or even an appetizer, these Spicy Sweet Potato fries are so delicious, you’ll be making them all the time.

Ingredients: 
2 large sweet potatoes
2 tablespoon olive oil
1/2 tsp kosher salt
1 1/2 teaspoon garlic powder
1 1/2 teaspoon smoked paprika
1 teaspoon dried thyme
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
Directions:
  1. Preheat oven to 400 degrees F.
  2. Cut sweet potatoes into thin, even match sticks. Leave skin on.
  3. Transfer to a baking sheet and drizzle with olive oil. Then sprinkle with seasonings, and toss.
  4. Bake for 15 minutes and stir to cook on the other side. Bake for 10 to 15 minutes more, or until brown and crispy. The fries are done when the edges are brown and crispy.
