Satisfy your sweet tooth this St. Patrick’s Day with these decked out cupcakes. It wouldn’t be St. Patrick’s Day with out indulging in a sweet green treat would it? They’re simple to make for that last minute party and with a few ingredients these rainbow topped cakes come together quicker than you’d imagine. Like I’ve said in some of my previous posts, being Irish, the Original Preppy Hostess took this holiday to a totally different level every year, so I’m carrying on the tradition. It’s the perfect excuse to eat green and rainbow themed treats all day long… right?

Most of the time I make my cakes and frosting from scratch but sometimes there are exceptions. When I’m in a rush and don’t have time to measure and sift, a boxed mix will do. You know what? They’re perfectly fine and have really improved over the years. Plus they cut the baking time in half, which means more time for decorating, the fun part. Buy extra Sour Airheads… I found myself eating them throughout the decorating process.

P.S. I came home for the day to visit the OPH, and she asked if I wanted to barrow some St. Patrick’s Day themed necklaces, blinking pins or shamrock socks to wear this year!

Ingredients: 

1 box vanilla cake mix

2 cans vanilla frosting

Rainbow Sour Airheads Candy

Edible green glitter

Green food dye

 

Directions: 

1. Mix up cupcakes according to package instructions. Add green food dye. Spoon into cupcake molds and cook. Allow to cool.

2. Take 1/2 of one of the containers of frosting and dye green. Set aside. Pipe white vanilla frosting on to cupcakes. Top with green frosting. Sprinkle with edible glitter. Stick rainbow candy into cupcake.
