Zucchini Bread

Zucchini bread. If you’ve never had it before it can be kind of difficult to wrap your mind around the concept. Zucchini is one of those foods you either love or hate, and definitely doesn’t seem like anything you would want to bake into something sweet. Grated zucchini, mixed into the batter, brings moisture and tender texture to what is essentially a spice cake. You can stir it up and have it in the oven in minutes! Now thats what I call a OMG fab recipe!

By adding fresh grated zucchini to the bread it makes the bread incredibly moist and that much more delicious. I like to eat this warm, right out of the oven or with a thick layer of peanut butter for breakfast. Did I mention this recipe is also really easy? There are no special tricks here, just measuring, stirring, and summoning your will power to wait until the bread is just warm before cutting a slice. Your home will smell delicious, warm and welcoming.

Ingredients:

(Makes two loaves) 

2 1/2 cups sugar

3 eggs

3 cups flour

3 teaspoons vanilla

1 cup oil

2 cups zucchini, grated

1/4 teaspoon salt

1 teaspoon baking soda

1/4 teaspoon baking powder

1 cup walnuts

3 teaspoons cinnamon

 

Directions:

1. Preheat oven to 350 degrees.

2. Combine all ingredients.

3. Pour into two greased loaf pans.

4. Bake for one hour.
