As much as I love to cook, I have to admit in the summer I’m a bit more laid back about meals. This is the perfect go to sandwich for the summer months because the entire meal can be prepared outside. Whether you’re barbecuing on the beach, in your yard – once the sun’s out, alfresco dining is totally in! Let grilling season begin! What’s your favorite meal to grill up for a crowd?
5 Italian turkey sausages
1 red pepper
1 yellow pepper
1 orange pepper
1 white onion
5 small hoagie rolls
- Prepare grill. Coat the grill rack with cooking spray.
- Lightly coat onion and bell peppers with cooking spray; sprinkle with 1/8 teaspoon salt and 1/8 teaspoon black pepper. Place onion on grill rack; grill 15 minutes. Turn onion over; add bell peppers and sausage. Grill an additional 15 minutes or until vegetables are tender and sausage is done; turn occasionally. Remove from grill.
- Slice bell peppers and onion into strips. Combine bell peppers, and onion in a large bowl.
- If desired toast buns, add the sausage and top with the bell pepper and onion mixture.
