After a long weekend, I always say that it is important to start the rest of the week off on a healthy note. On a Friday night, I’m not one to turn down a cold vodka cocktail, but once the work week rolls around I’m ready to start eating healthy again. You know that they say… detox before you re-tox! Sweet pineapple, strawberries, avocado, carrot ribbons, golden brown chicken and roasted almonds make a rainbow on a bed of fresh organic spinach. Be careful… you might just catch yourself having a blast eating this salad!

Ingredients:

3 cups baby spinach

1/2 cup chopped roasted chicken

1/4 cup sliced strawberries

1/4 cup sliced pineapple

1/2 cup carrot ribbons

1/4 of an avocado

2 tbs chopped roasted almonds

Lite vinaigrette

 

1. Place spinach in a salad bowl. Top with remaining ingredients. Toss with a lite vinaigrette.
